French Silk Pie

For my husbands birthday this year his request was a french silk pie. I figured easy enough! I can do that. What I was surprised by though was that REAL french silk pie has raw eggs in the recipe. Which I really just couldn't even stomach the thought. So I went in search of a recipe that did not call for eggs. This is what I found:



French Silk Pie (no eggs)

1/4C sugar

3T cornstarch

1 1/2 C milk

1 6oz package chocolate chips

1t vanilla

3/4C heavy cream

1T powdered sugar

graham cracker crust (you can buy your own or use this recipe)


In a medium saucepan combine sugar and cornstarch blend well and slowly add milk cook over medium heat until it comes to a boil. Stir in chocolate chips and vanilla and stir until melted completley. Pour in a mixing bowl and cover with plastic wrap and cool until room temp. In a large mixing bowl combine heavy cream, powered sugar, and beat until peaks form. Beat the cooled chocolate mixture until light and fluffy. Fold in the whipped cream and spoon into graham cracker crust. Top with a layer of cool whip and decorate with chocolate chips if desired.




A twist on No-Bake Cookies

Growing up we made these cookies ofen. You know the recipe? You boil sugar, cocoa, butter and milk on the stove. Then stir in peanut butter and oatmeal until drop them by spoonfuls on wax paper to set. Well I decided to make them the other day and try a few different things with the recipe. First I substituted the sugar with Truvia (a sugar substitute), used unsalted butter, and skim milk. Then when it came time for the PB & the oatmeal... I used all natural PB and also added in wheat germ, coconut, chopped peanuts, and craisins. The end result was fantastic!!! lots of sweet and saltiness mixed together!
